It’s a brisk five degrees outside and I have no intention of leaving the house. It’s a good day when you shower and put your pj’s back on. Apparently the playoff games are on, which I was completely oblivious to, but intend on watching with plenty of beer and chicken wings. However, being the Worst Cook Ever, I’m going to throw a quick and tasty dip together as well, that is bursting with color and flavor.
Sunday Dip -
Preheat oven to 375
1 cup of crumbled feta cheese - *1 cup of roasted tomatoes - 3 cloves of garlic - 3 scallions
*The roasted tomatoes add a kick to the smooth saltiness of feta cheese. Look for roasted tomatoes in the prepared foods section of your grocery store. Feeling ambitious? Make them yourself! Check out this how-to guide for roasting tomatoes.
Throw the feta and roasted tomatoes in an oven safe bowl. Add the garlic cloves (whole) and diced scallions. Mix it all together.
Roast the goodness in the oven for about 12-15 minutes or until the ingredients are well incorporated.
Eat with your favorite chips or pita bread. If your really hungry, this dip is great tossed with angel hair pasta and even better the next day chilled.
